Auld Lochnagar on Toast

-120g Auld Lochnagar cheese
-2 rashers of Ingram’s unsmoked back
-2 chopped spring onions
-2 slices of white or Balmoral bread
-Half teaspoon English or Dijon mustard
-Grill the bacon and cut it into small
-Lightly toast the bread and place on an
-Crumble the cheese and put with the
mustard in a non-stick pan on a very low
-Stir well as it melts.
-Sprinkle the bacon and spring onions on
-Top with the melted cheese and mustard
mixture and spread evenly.
-Place in a hot oven for about seven
minutes until lightly browned on top.
-Serve with sliced fresh tomatoes.
