INGREDIENTS: -4 x thick slices of walnut bread or plain white -3 x egg yolks -1 x teaspoon English mustard -125gms Cambus O'May grated cheese -1/2 med onion, peeled, finely chopped -1/4 teaspoon Malden sea salt
METHOD: -mash together the salt and onion with side of cooks knife. set aside for 5 mins -toast bread lightly on both sides, remove crusts -mix together yolks, mustard, cheese and onion paste -spread mixture evenly onto toast -place onto shallow oven tray and grill until browned on top Amuse Bouche or canapé idea for the discerning palate using Auld Lochnagar cheese handmade on the banks of the river Dee at Cambus O'May
